MIXED BEAN SOUP 
2 c. mixed dried beans (your choice one or more)
2 qt. fresh water
2 c. ham, diced or smoked sausage, sliced in 1-inch pieces (can use 1 c. each)
1 chopped onion
1 clove minced garlic
1 tsp. chili powder
1 (28 oz.) can tomatoes
2 tbsp. lemon juice
1 bay leaf
1/4 tsp. paprika
Salt and pepper to taste

Rinse beans, place in large pan. Sprinkle with 1 tablespoon salt and water to cover. Soak overnight. Drain, add 2 quarts fresh water and meats. Simmer 2 1/2 to 3 hours. Add remaining ingredients and simmer for 45 minutes. Add salt and pepper to taste. Remove bay leaf before serving.
