BAKED CARAMEL CORN 
3 qt. popped corn
1/2 c. peanuts or pecans
1/2 c. butter
1 c. firmly packed brown sugar
1/2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. vanilla

Combine popcorn and nuts in large lightly greased pan. In medium saucepan, melt butter over low heat. Add brown sugar, corn syrup and salt. Boil for 5 minutes without stirring. Remove from heat. Stir in vanilla and soda.

Pour syrup over popcorn, stirring until popcorn is coated. Bake at 250 degrees for 45 minutes, stirring every 15 minutes. Cool completely. Break apart. Store in airtight containers.
