BAKED CHICKEN REUBEN 
4 chicken breasts
1/4 tsp. salt
1/8 tsp. pepper
1 (16 oz.) can sauerkraut, drained
4 (4 x 6) slices Swiss cheese
1 1/4 c. Thousand Island dressing
1 tbsp. parsley

Place chicken in greased baking pan and sprinkle with salt and pepper. Place sauerkraut over top and cover with cheese. Pour dressing over cheese and cover with foil. Bake at 325 degrees for 1 1/2 hours. Sprinkle with parsley.
