Slice eggplant 1/2 inch thick and peel, sprinkle with salt; let stand. Dip in beaten egg, crumbs, and fry. Either deep fry or regular. Brown 1/2 pound ground beef lightly. Add chopped onion and saute. Salt and pepper. You may add chopped green pepper. Add 1 or 2 cups cooked tomatoes. Simmer this meat- tomato mixture for a few minutes.
Line greased baking dish with sliced eggplant, then layer meat mixture, layer eggplant, etc. Sprinkle grated cheese and crumbs on top. Bake at 350 degrees for 30-40 minutes.
