CARROT CASSEROLE 
1 onion, minced
1/2 c. butter, melted
5 c. sliced, cooked carrots
1/2 lb. shredded cheese
Ritz crackers

Butter casserole dish, layer carrots and cheese. Pour mixture of onion and melted butter over top. Sprinkle crushed crackers over top. Cover and bake at 350 degrees for 30 to 40 minutes.
