CARROT CASSEROLE 
1 c. carrot, peeled and shredded
1 c. potato, peeled and shredded
3/4 c. sweet potato, peeled and shredded
3 tbsp. chopped onion
1 1/2 c. cooked brown rice
1/3 c. rice milk
1 tbsp. low sodium soy sauce
1 tsp. Mrs. Dash extra spicy seasoning

Preheat oven to 350 degrees, then bring 1 cup water to a boil and add vegetables; cook 5 minutes. Add 1/2 cup water to vegetables and add remaining ingredients; mix well. Pour into non-stick casserole dish (use non-stick spray) and bake for 30 minutes. Serves 4 to 6.
