CARROT-CHEDDAR CASSEROLE 
2 c. cooked, mashed carrots
2 beaten eggs
1 1/2 c. milk
1 c. cracker crumbs
2 tbsp. butter
Salt
1 c. shredded cheese

Combine all ingredients. Pour into 8x8x2 inch baking dish. Bake 30-40 minutes, 350 degrees. Top with crisp bacon curls.
