CARROT PUDDING | |
1 lb. carrots 1 c. milk 2 eggs 3/4 c. sugar 2 tbsp. flour 1/4 tsp. cinnamon 1 tsp. baking powder 1/4 c. butter Slice carrots and boil until tender, about 20 min. and then mash. Preheat oven 350 °F. Melt butter in casserole in oven. Mix dry ingredients together. Add dry mixture to mashed carrots and mix well. Mix together milk and eggs. Add liquid mixture and stir. Pour into buttered casserole. DO NOT STIR. Bake 45 min. If you plan to freeze simply melt the butter in glass cup and mix it with the other ingredients before pouring in dish. Serves 6. |
