CARROT PUDDING 
1 c. ground carrots
1 c. ground potatoes
1 c. sugar
1 egg
1/2 c. butter
1 c. raisins
Nuts can be added
1 c. flour
1 scant tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves

Grind carrots and potatoes in bowl. Add sugar and melted butter. Stir in dry ingredients, egg and raisins. I melt butter in the container I cook the pudding in. Helps keep it from sticking. Steam 2 1/2 hours.

SAUCE:

1 c. sugar
3 tbsp. flour
1/4 tsp. lemon flavoring
1/2 cube butter
1/2 tsp. salt
1 tsp. vanilla

Stir until butter is well mixed with dry ingredients. Add about 2 cups hot water and stir until it thickens. If quite thick, add cream to desired consistency. Pour over pudding.
