HAM/BARLEY SOUP | |
2 ham hocks (smoked) 1 sm. onion, chopped finely 1 carrot, peeled and cut finely 1 stalk celery, cut finely 1 c. pearl barley 4 qts. water 2 sprigs chopped fresh parsley Combine all ingredients in 4-quart soup pot except barley. Allow to boil. Reduce to simmer for 2 hours. Add barley. Continue cooking 1 hour longer. Remove ham hock and add cut-up ham hock into soup. Serve. |
