HAM/BARLEY SOUP 
2 ham hocks (smoked)
1 sm. onion, chopped finely
1 carrot, peeled and cut finely
1 stalk celery, cut finely
1 c. pearl barley
4 qts. water
2 sprigs chopped fresh parsley

Combine all ingredients in 4-quart soup pot except barley. Allow to boil. Reduce to simmer for 2 hours. Add barley. Continue cooking 1 hour longer. Remove ham hock and add cut-up ham hock into soup. Serve.

This is a winning combo, I added potatoes to the one I made it was GREAT, I put it all in the crock pot, I would do it again any day, it's good, the ham and barley work well together!!!

My grammy always made this soup, she would boil the ham hocks with 2 bay leafs for a different flavor. She always added potatoes but not carrots. I`ve made it myself for years! Its a great stick to your ribs, thick soup.

I added potatoes, rutabaga, bay leaves, parsley and basil. the rutabaga and potatoes really give it a smooth taste. My family loves it!
