R.'S CARROT CASSEROLE 
2 c. cooked and mashed carrots
1 c. cracker crumbs
1 c. evaporated milk
3/4 c. grated Cheddar cheese
1/4 lb. softened butter
1/4 c. minced onion
1 tsp. salt
1/4 tsp. pepper
2 eggs (or 1/2 c. Egg Beaters)

Combine all except eggs. Beat eggs well and fold into mixture. Pour into well greased 1 1/2 quart baking dish. Bake 40-45 minutes at 350. Can be made ahead. Serves 4-6.
