ZUCCHINI CAKES 
1 1/2 lb. zucchini, coarsely grated
5 scallions, chopped
2 tbsp. grated onions
2 1/2 c. grated Cheddar cheese
1/4 c. chopped parsley
3 eggs, lightly beaten
3 tbsp. flour
Salt
Pepper

Sprinkle zucchini with salt. Allow to set 20 minutes. Squeeze dry and mix in the bowl with remaining ingredients. Season with salt and pepper. Heat 1/2 cup oil in frying pan, drop tablespoons of mixture into the hot oil and cook until golden brown on both sides. Drain on paper towels. Serve hot or cold. Can be served as a side dish.
