FLORIDA SWEET POTATO PIE 
1/2 c. cooked sweet potato
3/4 c. sugar
3 eggs
1 c. whipping cream
1 tsp. vanilla
1 tsp. butter flavoring
2 tbsp. melted butter
1 pie crust
1/2 c. coconut

Mix all ingredients, warm over heat, but don't boil, sprinkle coconut in pie crust. Pour potato mixture into crust. Cook 5 minutes at 425 degrees. Reduce heat to 325 degrees and cook 20 to 25 minutes longer.
