MRS. N.'S FLORIDA LIME PIE 
1 c. sugar, divided
1/4 tsp. salt
1/4 oz. env. unflavored gelatin
1/4 c. water
4 eggs
1/2 c. lime juice
1 tsp. grated rind of lime
1 (9 inch) pie crust, baked
Whipping cream
4 tsp. sugar
2 drops vanilla

In top of double boiler, combine 1/2 cup sugar with salt, gelatin and water. Separate eggs. In small bowl, combine lime juice with egg yolks. Stir into gelatin mixture in double boiler using a wire whisk. Cook over boiling water 7 minutes or until gelatin dissolves and mixture thickens. Remove from heat and stir in lime rind. Place pan in ice water, stir occasionally as it cools.

In large bowl, beat room temperature egg whites until stiff. Add remaining sugar and beat constantly Fold cooled lime mixture into the stiff egg whites using a plastic spatula. Turn into pre-baked pie shell and refrigerate until set. In cold mixing bowl whip cream with sugar and vanilla. Cover the pie with this.
