CHICKEN AND RICE CASSEROLE 
3 c. diced, cooked chicken
2 to 3 c. cooked rice (brown or white)
2 cans cream of mushroom soup
1 1/2 c. chopped celery
1 sm. onion, chopped
1 c. mayonnaise
2 tbsp. lemon juice
1 c. soft bread crumbs
2 tbsp. butter, melted
1 sm. pkg. sliced almonds (optional)

Combine chicken, rice, soup, celery, onion, mayonnaise, lemon juice and almonds (optional) in a large bowl. Stir and mix well. Spoon mixture into a greased shallot 2 quart casserole.
