CHICKEN AND BROCCOLI STIR-FRY 
1 lb. fresh broccoli
2 tbsp. cornstarch
3 tbsp. soy sauce
1 whole chicken breast, skinned and boned
3 tbsp. oil
1 lg. onion, chunked
1 tsp. ginger root, minced
1 clove garlic, minced

Remove broccoli flowerets; cut in half lengthwise. Peel stalks; cut diagonally. Combine 3/4 cup water, 1 tablespoon cornstarch and 2 tablespoons soy sauce; set aside. Cut chicken into strips.

Combine remaining cornstarch and soy sauce; stir in chicken and coat thoroughly. Heat 1 tablespoon oil in large frying pan or wok over high heat. Add chicken; stir-fry 1-2 minutes until chicken is brown.

Remove from pan. Heat remaining oil and add remaining ingredients. Stir-fry 4 minutes until broccoli is tender. Stir in chicken mixture. Bring to boil; cook and stir until thickened.
