CHICKEN WITH PINEAPPLE 
2 chickens, (2 lbs. ea.) quartered
2 tbsp. butter
2 tbsp. oil
1/2 c. onion, minced
1 tbsp. grated lime rind
2 tbsp. brown sugar
2 c. crushed pineapple
1 c. pineapple juice
Salt to taste

Brown the chicken in the butter and oil, in a heavy skillet, with a cover. Add the onion, lime rind, sugar, crushed pineapple and the juice. (Fresh pineapple if possible, but canned pineapple will do. Omit sugar if using canned pineapple. Fresh pineapple can be crushed in blender, using very little water.)

Cover and simmer for about 20 minutes or until the chicken is tender. Chicken with pineapple blends beautifully with candied yams.
