CRANBERRY-PINEAPPLE SALAD 
1 (3 oz.) pkg. cherry Jello
1 c. boiling water
1 tsp. lemon rind, grated
1 tbsp. lemon juice
1 (3 oz.) pkg. cream cheese
1/3 c. mayonnaise
1/8 tsp. salt
1 (16 oz.) can whole cranberry sauce
1 (8 oz.) can crushed pineapple
1/2 c. chopped celery
1/4 c. chopped nuts

Dissolve Jello in water, add lemon rind and juice, cheese, mayonnaise and salt. Beat with mixer. Chill until lumpy. Beat again until smooth. Fold in cranberry, pineapple, celery and nuts. Mold and chill. Serves 8.
