ORANGE MUFFINS FROM "EDWARD'S
MANSION" SAN BERNARDINO, CA
 
2 c. sifted flour
2/3 c. sugar
1 tbsp. baking powder
2/3 c. shortening
1/3 c. soft butter
4 eggs, beaten
1/2 c. milk
1/2 c. orange juice
1/2 c. diced orange sections
1/4 c. sliced almonds

Mix flour, sugar and baking powder in large mixing bowl. Add the following ingredients in order and one at a time while stirring; shortening, soft butter, beaten eggs, milk and orange juice. Do not add all at once but one by one gradually. Put batter into greased or paper-lined muffin tins filling each tin 2/3 full.

Top each with diced orange section and sliced almonds. Bake in 350 degree oven for 25 minutes or until done.

Makes 16 muffins.
