HONEY ORANGE CHICKEN | |
2 whole chicken breasts, boned and split Curry powder 1/2 c. orange juice 3 tbsp. honey 3 tbsp. prepared mustard Sprinkle chicken with curry powder to taste. Place in shallow 9 x 13 inch baking dish. Combine orange juice, honey and mustard. Pour over chicken. Bake at 375 degrees for 40 minutes or until tender. Remove chicken to warm platter. SAUCE: 2 tsp. cornstarch 2 tbsp. cold water 1 orange, peeled and sectioned In a small pan, combine cornstarch and cold water. Stir in pan juices. Cook, stirring constantly, until sauce thickens. Add orange sections and cook 2 minutes longer. Pour sauce over chicken to serve. Serves 2-4. |
