HONEY ORANGE CHICKEN | |
4 skinless, boneless chicken breasts 1 tsp. nutmeg 1/8 tsp. pepper and 1/2 tsp. artificial salt 1 1/2 c. orange juice 1/2 c. honey 1/4 c. raisins 2 tbsp. cornstarch 2 tbsp. water 1/4 c. toasted sliced almonds Flatten chicken breasts slightly. Sprinkle both sides of chicken with nutmeg, salt (artificial), and pepper. Combine orange juice, honey, and raisins in a skillet. Add chicken. Cover and simmer 15 to 20 minutes or until chicken is tender. Remove chicken. Dissolve cornstarch in water and stir into orange juice mixture. Cook until thickened, stirring constantly. Return chicken to skillet. Stir in almonds. Heat. Serve chicken and sauce with prepared couscous or plain, wild or mixed rice. |
