PIZZA MEATBALLS | |
1 lb. ground beef 1 c. dried bread 1/2 c. milk 2 tbsp. instant minced onion 1 tsp. garlic salt 1/8 tsp. pepper 4 c. hot cooked rice 1/2 (8 oz.) pkg. Mozzarella cheese, cut into 12 bite size cubes 3 tbsp. all purpose flour 2 tbsp. salad oil 1 (12 - 15 1/2 oz.) jar pizza sauce Parsley sprigs for garnish About 45 minutes before serving, in medium bowl with fork, mix well first 6 ingredients. Shape mixture into 12 large meat balls with 1 cube of cheese in center of each, making sure that cheese is completely covered with meat mixture. On wax paper, coat each meat ball lightly with flour. In a 12" skillet, over medium heat, in hot salad oil, cook meatballs until browned on all sides. Spoon off fat. Add pizza sauce to meat balls in skillet. Heat to boiling. Reduce heat to low. Cover and simmer 10 minutes. Serve on rice. Garnish with parsley. Makes 7 servings. |
