SWISS VEGETABLE MEDLEY 
1 (16 oz.) bag frozen broccoli, cauliflower, and carrot combo (thawed and drained)
1 (10 3/4 oz.) can cream of mushroom soup
1 (4 oz.) c. shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. black pepper
1 (4 oz.) jar chopped pimento, drained
1 (28 oz.) can French fried onions

Combine vegetables, soup, 1/2 can onions, 1/2 cup cheese, sour cream, pepper, and pimento. Pour into 1-quart casserole. Bake at 350 degrees for 30 minutes. Sprinkle remaining cheese and onion over the top; bake 5 minutes more. Serves 6.
