YELLOW SQUASH WITH SOUR CREAM SALAD | |
3 med. sliced yellow squash, sliced 1/4" thick (3 c.) In boiling, salted water, place squash. Bring to boil again and boil 1 minute. Drain and chill. In bowl, blend the following: 2 tbsp. cider vinegar 1/2 tsp. salt 1/3 c. sour cream 1/8 tsp. pepper Fold in chilled squash and keep chilled until ready to serve. |
