ZUCCHINI PINEAPPLE CAKE 
3 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. vanilla
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 c. vegetable oil
3 beaten eggs
1 sm. can crushed pineapple
1/2 c. coconut
2 c. ground zucchini
1 c. walnuts or pecans

Mix flour, sugar, soda, vanilla, cinnamon and salt. Add remaining ingredients. Place in 9x13 inch cake pan and bake for 1 hour at 350 degrees. Cool and frost.

1 (8 oz.) cream cheese
1/2 c. butter
1 tsp. vanilla
1 box powdered sugar

Have butter and cream cheese at room temperature. Mix with mixer and add vanilla and sugar.
