BLUEBERRY OATCAKE 
PER SERVING:

1/2 cup rolled oats
3 or 4 egg whites
1 tsp. cinnamon
1 tsp. water
1/3 cup blueberries

Add oats, egg whites, cinnamon, and water together and whisk for one minute. Stir in the blueberries.

Heat a skillet to medium heat and pour in batter. Cook for about three minutes, then flip and cook for about 1 additional minute.

Can be served with your favorite syrup or it is even moist and fluffy enough to be eaten plain for a healthier version!
