SHRIMP CASSEROLE 
1 med. onion, chopped
1 tbsp. butter
1 can cream of mushroom soup
1/2 tbsp. lemon juice
1/2 c. sour cream
1 1/4 lb. cooked shrimp
3/4 c. cooked rice
1 c. grated cheddar cheese
Dash garlic salt and pepper

Saute onion in butter. Add lemon juice and seasonings. Fold in sour cream, cooked rice, cream of mushroom soup, shrimp, and 3/4 cup of the cheese. Pour in a buttered baking dish and sprinkle with the remaining cheese. Bake at 325 degrees for 30 minutes.
