ZUCCHINI NUT LOAF | |
1 c. grated unpeeled zucchini 1 c. sugar 1 egg 1/2 c. oil 1 1/2 c. flour 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. baking soda 1/2 tsp. nutmeg 1/4 tsp. baking powder 1/4 tsp. lemon peel, grated 1/2 c. chopped nuts In large mixing bowl, beat first 3 ingredients. Add oil and mix well; stir flour, cinnamon, salt, soda, nutmeg, baking powder and lemon peel into zucchini. Fold in nuts. Pour into greased 8 1/2" x 4 1/2" x 2 1/2" loaf pan and bake at 325 degrees for 60 to 65 minutes or until done. Cool in pan 10 minutes, then cool thoroughly. Wrap and store overnight before slicing. |
