ZUCCHINI SAUERKRAUT LOAF 
3/4 c. sauerkraut, drained & chopped
3 c. coarsely grated zucchini
1 c. grated potato
1 tbsp. grated onion
2 tbsp. oil
2 eggs, beaten
1/4 c. flour
3/4 tsp. baking powder
1 tsp. salt
1/8 tsp. pepper

Drain vegetables if watery. Mix all ingredients together and bake uncovered in greased 7 x 11 pan at 350 degrees until lightly browned, about 1 1/4 hours. I use Stokely Bavarian Kraut with Caraway Seed. Serves 6 to 8.
