CANDIED YAMS 
2 lg. sweet potatoes
1 c. sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. ginger
1 tsp. lemon juice
1/4 c. butter, sliced

Boil sweet potatoes until tender. Remove skins. Mix sugar, cinnamon, nutmeg and ginger; add water. Quarter the potatoes and put them in a heavy skillet. Pour sugar mixture plus lemon juice potatoes and top with pats of butter. Cook over low heat, turning several times. Cook 20 to 30 minutes.
