PICKLED PIG'S FEET 
6 pigs feet, scrubbed & rinsed

Cover with cold water in heavy kettle. Season with salt and garlic to taste and simmer several hours until meat separates from bone.

In saucepan, simmer for about 5 minutes: 1 tbsp. pickling spice

Discard spice bag. Set vinegar aside. Cool feet - remove bones. Stir spiced vinegar, 1 teaspoon sugar and 1 chopped hot red pepper into meat mixture. While warm, pack meat and juices into wide mouth jar and chill.
