PORK LOIN WITH MAPLE SAUCE 
3 - 4 lb. boneless pork loin or 4 (1 inch) thick chops
2 c. beef consomme
1 c. maple syrup
2 tbsp. "Kitchen Bouquet"
1 bay leaf
White pepper
3 tbsp. cornstarch dissolved in 1/4 cup cold water

Brown pork loin or chops on all sides. Combine rest of ingredients and simmer pork for 1 hour (chops) or 2 p 3 hours (loin). Remove meat and bay leaf. Keep warm. Boil maple sauce for 15 to 20 minutes then thicken with cornstarch, stir slowly over medium heat until bubbly. Serve with meat. Serves 4. Serve with pineapple mustard relish (see Miscellaneous).
