APPLE 'N NUT TOSS | |
2 c. diced tart, red apple, unpeeled 1 tbsp. lemon juice 1 c. diced celery 1/2 c. Sunlite mayonnaise (below) Lettuce, chilled 1 c. chopped walnuts or pecans In a medium size bowl, sprinkle apple with lemon juice to keep from discoloring. Combine apple with celery. Add mayonnaise and mix well. Arrange chilled lettuce leaves on six plates and spoon on salad mixtures. Sprinkle with nuts. Makes 6 servings. 1/4 tsp. salt 2 tbsp. lemon juice 1 c. Sunlite oil Have all ingredients at room temperature. Combine egg, salt, and lemon juice. Add 1/4 cup Sunlite oil in blender container. Blend together until mixture begins to thicken. Blend in remaining 3/4 cup oil. Pour in a thin stream until mixture is thick and smooth, about 2 minutes. Allow slightly longer beating time for rotary or electric beater. Makes 1 cup. |
