ZUCCHINI CASSEROLE 
2 lb. sliced zucchini, cooked & drained
1 can cream of mushroom soup
1/2-3/4 c. shredded Cheddar cheese
1/2-3/4 c. sour cream
1 lg. carrot, grated
1 med. grated onion
1 pkg. stuffing mix mixed with 1/4 lb. butter
Optional 1-1 1/2 lb. ground beef, cooked

Mix first 6 ingredients with beef. Put 1/2 the stuffing mix into 13 x 9 inch pan. Cover with zucchini mixture. Cover with remaining stuffing mix. Bake at 350 degrees for 30 minutes.
