MORAVIAN CARROT CAKE 
4 eggs, beaten lightly
1 1/3 c. Mazola oil
2 c. sugar
2 c. cake flour
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
3 c. carrots, finely grated

Preheat oven to 350 degrees. Mix together the eggs and Mazola oil. Add sugar. Sift together the cake flour, cinnamon, soda and salt. Add the carrots. Bake in 3 (9 inch) cake pans which have been greased and floured. Bake at 350 degrees for 30 to 40 minutes or until done.

ICING:

1 (1 lb.) pkg. confectioners sugar
1 stick butter
1 (8 oz.) pkg. cream cheese
1 tsp. vanilla extract
1 c. nuts, chopped fine

Mix and place on cake.
