“SPICY BANANA PECAN CAKE” IS IN:

SPICY BANANA PECAN CAKE 
1 1/2 cups sugar
1/2 cup butter
1/2 cup vegetable oil
3 eggs
3 cups all-purpose flour
2 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
3 large ripe bananas, mashed (1 1/2 cups)
1/2 cup milk
1 1/2 cups chopped pecans
1 1/2 cups raisins

In the bowl of an electric mixer, combine sugar and butter, creaming until light and fluffy. Add oil.

Beat in eggs, one at a time, beating well after each addition.

Sift together flour, baking soda, salt, cinnamon, and cloves.

Combine mashed banana and milk; add to creamed mixture alternately with flour mixture, beating until smooth after each addition. Stir in nuts and raisins.

Turn batter into a greased and floured 10 inch fluted tube or Bundt pan.

Bake in a preheated 325°F oven for one hour and 10 minutes or until cake tests done.

Cool in pan 10 minutes.

Invert onto a wire rack to cool. Dust powdered sugar lightly over cooled cake or frost with confectioners icing.

This is one of the best banana cake recipes I've ever baked. I added extra cloves and cinnamon for more spice and substituted walnuts. Watch not to over bake. Wonderful!!!

Tried this yesterday, and came out great. Every one loved it. This was my second made from scratch cake, and came out very nice. We skipped the nuts to our liking. Used a deep cake bowl and the timing is a bit more than the mentioned (added 20 minutes more towards the end on 350°F). The crust was tad crunchy and yum! Recommend the Bundt or a flat mold instead.
My kiddo mixed and poured, so it was a fun time cake.

I made this cake. It is wonderful. I only had to bake it for 1 hr. This cake has a lot of wonderful substance. Not like box cake mix. I would make it again.

My husband's comment was, "Please, don't ever make banana bread again! Only make banana cake!"

He LOVED it!

I omitted the nuts and raisins, per our family's taste. However, we did melt some butterscotch chips and pour them over it...yummy!
