ANGEL CORN MUFFINS 
1 c. self-rising flour
1 pkg. yeast
2 eggs, beaten
1/2 tsp. sugar
1 c. self-rising meal
1/2 c. corn oil
1 tbsp, sugar
1 1/2 c. buttermilk

Combine dry ingredients. Add eggs, oil and buttermilk. Grease muffin tins. Fill muffin tins 1/2 to 2/3 full. Bake at 450 degrees for 12-15 minutes. Makes 12. This recipe freezes well.
