MARINATED BROCCOLI & BLACK EYE
PEA SALAD
 
1 lg. bunch broccoli, cut into sm. pieces
Juice of 1 lemon
1 (1 lb.) can black eye peas, drain & rinse
1 med. red onion, cut into thin slices
1 med. bell pepper, chopped
Red wine vinaigrette

Steam broccoli over water and lemon juice 5 to 7 minutes, until tender but still crisp. Remove from steamer and combine with remaining ingredients, tossing to coat well. Cover and refrigerate at least 4 hours, tossing every so often.

Red Wine Vinaigrette: 1/2 cup red wine vinegar, 2 tablespoons Dijon mustard, salt and pepper, 1 cup olive oil. Combine all ingredients in a bottle, cover and shake well.
