LOW FAT WHITE SAUCE 
1 can evaporated skim milk
1/4 c. all-purpose flour
1 tsp. instant minced onion
1/4 tsp. salt

Whisk all ingredients in saucepan until smooth. Bring to boil whisking continuously over medium heat. Boil 3-4 minutes until thick and bubbly.

Or, before cooking, add 1 cup finely chopped mushrooms or 1/2 teaspoon celery seed.

To be used in place of high fat/high sodium cream soups.
