LOW FAT WHITE SAUCE 
1/4 c. flour
2 c. skim milk
1/4 to 1/2 tsp. salt

Gradually stir in milk to flour and salt, using a wire whisk. Cook over medium heat until thickened, stirring constantly (or use a microwave, stirring every 1 1/2 minutes, until thickened.) Use for gravies, creamed dried beef, cheese sauce, etc. Yield: 2 cups.

Since microwave ovens vary in power, you may need to adjust your cooking time.
