MANDARIN ORANGE SALAD 
7 c. torn lettuce
2 c. chilled mandarin oranges
1/2 c. olive oil
1/3 c. vinegar
2 tbsp. water
1 med. onion, sliced
1 tbsp. sugar
1 clove garlic, minced
1 tsp. celery seed
1/2 tsp. salt
Dash of pepper

Place lettuce and oranges in a bowl and chill. Place olive oil, vinegar, water, onion, sugar, garlic, celery seeds, salt and pepper in a saucepan. Bring to a boil; remove from heat and chill. Just before serving, pour dressing over lettuce and oranges - toss well.

OPTIONAL:

1/2 c. walnuts
1 tbsp. butter
1/4 tsp. salt

Saute nuts in butter and salt until nuts are crisp and butter is browned. Sprinkle walnuts over salad.
