CARROT BRAN MUFFINS 
1 c. bran flakes cereal, crushed
1 1/4 c. whole wheat flour
1/4 c. packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. skim milk
1 egg
3 tbsp. oil
1 1/2 c. carrots, grated
1/4 c. raisins (opt.)

Thoroughly combine cereal, flour, sugar, baking soda, baking powder and spices in a large bowl. In small bowl mix together milk, egg and oil. Stir into dry ingredients; mix well, but do not overstir. Add carrots and raisins. Spoon batter into lightly greased muffin pans. Bake at 400 degrees for about 15 minutes or until toothpick inserted in middle comes out clean. Makes 12 muffins.
