CARROT ZUCCHINI MUFFINS 
3/4 c. orange juice
1/2 c. butter
1 egg
1 c. flour
1 c. whole wheat flour
1/2 c. sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
1 c. shredded carrots
1 c. shredded zucchini

Heat oven to 400 degrees. In large bowl combine orange juice, butter and egg. Add all remaining ingredients except carrots and zucchini. Stir just enough to moisten. Fold in carrots and zucchini. Spoon into greased muffin pan. Bake 18 to 20 minutes. Let cool 5 minutes. Remove from pan. 1 dozen.
