SUNSHINE CARROT MUFFINS 
2 c. flour
1/4 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 c. grated raw carrots
3/4 c. milk
1/2 c. chopped nuts
1/4 c. oil
1 egg, beaten
1 tsp. grated orange peel

Into a bowl, sift together flour, sugar, baking powder and salt. Mix together carrot, milk, nuts, oil, egg and orange peel. Add carrot mixture all at once to flour mixture, stirring just until dry ingredients are moistened. Fill greased muffin cups 2/3 full. Bake at 425 degrees for 20-25 minutes. Makes 12 muffins.
