PINEAPPLE CHEESE CASSEROLE 
20 oz. can pineapple
1/2 c. sugar
3 tbsp. all-purpose flour
1 c. cheddar cheese, shredded (mild)
1/2 c. butter
1/2 c. Ritz cracker crumbs

Drain pineapple and save 3 tablespoons juice. Combine sugar, flour and juice. Add cheese and pineapple. Add to greased 1-quart casserole dish. Top with combined butter and cracker crumbs. Bake at 350 degrees for 20-30 minutes.
