BLACKBERRY CAKE 
2 c. sugar
3/4 c. shortening or 1 stick butter plus 1/4 c. Crisco
4 eggs (1 c.), add water to make 1 c.

Mix on high speed for 3 to 5 minutes. 1 c. berries, lift out of juice 2 c. flour 12 tbsp. flour 2 tsp. baking powder 3/4 tbsp. baking soda 1 or 2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. allspice

Bake at 375 degrees for 2 minutes.

Makes 2 (9 inch) layers.

ICING:

4 oz. Philadelphia cream cheese
1 lb. confectioners' sugar
1 1/2 tsp. vanilla
1/2 stick butter
3 tbsp. milk

Mix until ready to spread.
