CHINESE FRIED RICE 
2 c. onion
2 c. pepper (green)
(Optional use 1/2 to 1 c. carrot sliced thin)
2 tbsp. oil
2 c. cold cooked rice
1-2 tbsp. soy sauce
1/2 tsp. salt (garlic salt)
2 eggs, slightly stirred

Chop onion and green pepper coarsely. Heat pan; add oil and fry vegetables until slightly brown. Add cooked rice and saute, adding soy sauce and salt. Add eggs, saute until heated thoroughly. For variety, add 2 cups chopped, cooked meat, bacon, ham, shrimp or leftovers. We all like shrimp best. I use the salad shrimp (cooked).
