MAMA'S SWEET POTATO BREAD 
3 c. sugar
4 eggs
1 c. cooking oil
2/3 c. water
3 1/2 c. plain flour
2 tsp. baking soda
1 tsp. salt
2 tsp. nutmeg
3 tsp. cinnamon
2 c. cooked, mashed sweet potatoes
1 c. nuts, chopped
1 c. raisins

Cream sugar and eggs. Blend in oil. Add water, flour, soda, salt and spices. Beat in potatoes. Mix well. Add raisins and nuts. Pour into 4 greased 1 pound coffee cans. Bake 1 hour at 350 degrees. Let cool. Save plastic coffee can covers to put on cans for freezing. Wonderful to make ahead and freeze for Christmas.
