2 lg. or 4 med. size Idaho potatoes 3 tbsp. butter 3 tbsp. vegetable oil 1 med. size onion, thinly sliced & separated into rings Salt & pepper Pare potatoes, cut into very thin slices. Heat butter and vegetable oil in a heavy 10" skillet until few drops of water will sizzle when flicked into skillet. Spread thin layer of potatoes in the fat, allow to cook until the slices of potato turn golden brown (5 minutes) then layer onion rings and remaining potatoes in skillet. Turn potatoes with turner, allow potatoes to cook until crispy golden and turn again. Continue cooking and turning until they are crisp, brown; sprinkle with salt and pepper. |
