HOT SPINACH DRESSING 
1/2 lb. bacon, fried & crumbled
1 lb. spinach
Med. onion, sliced
2 hard-boiled eggs

DRESSING:

1 1/2 tbsp. bacon fat
1/2 c. sugar
1/2 c. vinegar
1/2 tsp. salt
1 beaten egg

Clean spinach, discard stems. Add bacon, onion rings and sliced eggs. Just before serving, top with hot dressing.
